Buckhunter, those are some clean looking hogs. Are you using a knife on the hams and pulling them the rest of the way or a combination of both? They look great!
We start'em with a knife and try to pull as much as we can. These pigs are my son's "Back Up" pigs. He takes one to auction, F.F.A. and the other one goes in the freezer.
This just happens to be a fair hog as well that I slaughtered at a friends place for them. Top photo was before I cut the tail and feet off. I was definitely not impressed with the meat quality, very bland.
