No different than beef. Some are tender and some aren’t. It’s not like moose are grain fed for 3 months before they are killed.

This is what I was thinking as well. Cube it and can it, guaranteed not to be tough. I would also think that the instapot idea or slow cooker/crock pot would do the trick. We have a really good moose slow cooker receipt if the OP is interested.Pressure canner is your friend
