Reeling in the weekend with some meat care. Plan is to grind up the bounty from my trip to Kodiak. A friend was gracious enough to lendme his 1hp LEM Grinder and man it is sooooooweeeeeet! Thanks JEFF!!

There's nothing I love more than meat, and BACON. So what better way to kick this off right with a grind of goat and strips of bacon. I did a rough ratio of 90-10 mix.

So I heard goat fat is tasty, so with the fat trimmings I choked up the fat grinder plug and ran everything thru.

And here's the rendering goin down. Ill separate the rendered fat from the cracklings and find a use for them later.

Nice! Love seeing the rendering, nothing like some cracklings for a good snack. I do like goat fat and have never added anything else when grinding goat (only have two, not an expert), but I bet that burger tastes great!

I do some bacon venison every year and it's awsome good so the goat is probably even better. My butcher uses local smoked bacon , oh so yummy !
