    Sous Vide Billy Goat Steaks

    Goat is not known as the most tender of game meat. Saved a couple back strap steaks from this years goat to try. 12 hours in the water bath and browned in high temp grape seed oil. Came out very tender and tasty, not fork tender but still much more so than just cooked on the grill.

    EMR II takes a canoe ride

    Had a chance to take the EMR II out for a canoe trip down the Yukon. We flew into a drainage near Canada and floated out to Circle Alaska. Was honored to be accompanied by a local trapper that has lived in the bush for over 30 years. Sheep Sleeping pad made from a Fannin sheep hide.
