Brown Meat

When I was younger I pride myself in getting animals out whole. Getting older and more modern back packs its just easier to bone out in the field. The problem is more surface area for the meat to turn brown from oxygen and just in general more dirty.

What do you guys do with your brown meat? Toss it in the grind pile? Dog food? Or eat it?

Im planning on making summer sausage for the first time. Im assuming the brown meat should be fine in the grind?

When you say “brown” do you mean the dried out rind? The meat that’s exposed to the air between killing and packaging usually starts to dry out and turn brown. I trim that off and toss it.

I age mine about a week and trim the brown, but it is a rind by then. If it is the same texture as regular meat, I dont trim it.

I trim into two piles, one for grind which is clean and good looking red meat and one is for the dog which is everything else. I am pretty lenient with the dog pile cause they gotta eat too! I do a course grind for the dog food.
