Are you doing the handles on premade blanks? I’ve made a few knives. The biggest thing I’ve learned is no matter how good you think it is, it can always be better lol. I’m my own worst critic and would spend hours trying to make small parts better. Take your time and don’t be in a hurry, I have the scars to prove it!
