Looking at a .40 cal muzzleloader for hunting and am trying to choose the best option.

It seems the CVA paramounts are sold out and I've heard some mixed reviews / controversy on them but I do like that they have nitride.

The Knight peregrine seems solid with great reviews, but why is it SS and no nitride? Seems odd for a their "premium" muzzleloader.

I appreciate any insight / suggestions!

The .40 cal Paramounts are really hard to find right now, and according to CVA, they aren’t producing them currently due to inconsistent supply of BH209. I have a .40 Paramount, but it was finicky with the 225 ELR bullet. I ultimately switched to a swaged, bore sized Arrowhead 275 XLD bullet and it shoots them very well.
