Lem silver skin knife

Lem makes a silver skin knife. I was wondering what people's experience with it were.


I do my own processing and like the knives I have. I was just curious if this actually makes things faster. Thanks for all who participate in the thread.
 
Sounds like a gimmick or single purpose knife really. Silverskin is easy to remove with regular boning knife even if you don't have decent knife skills.
 
O I agree. I have good knife skills but time is money. So I was curious if anybody has used it and if it's worth it.
 
The skeletonized deboning knife Buck has works very well.

EDIT: Hmmph... I was curious about that that bar thing was for, so watched the video they have. That part is actually pretty cool! I remember not liking how some of the times when trying to feather off the silver skin I would get upset with myself when I didn't keep the cuts as thin as I wanted. Seems like that bar thing would help reduce a lil bit of wasted meat. And it certainly would save a considerable amount of time. Is it a very slow process when doing it manually.
