I know this is a cooking in the wild area but I didn't know where to post this.
This is the reason I hunt. Homegrown eggplant and hunted venison for a Tex Mex venison stuffed eggplant dinner.
Venison, one pound, cook in skillet
Add Chili Peppers, from garden
I package Lipton Onion Soup
Chili powder, season to taste
1 can corn
I can beans, I didn't have any
Fresh Cilantro, also out
Bake eggplant, season with black pepper and garlic salt
Add taco seasoning to venison when venison is cooked.
Scoop eggplant out of skin when cooked and add to venison.
Mix all ingredients well
Put in eggplant skin
Add cheese and bake until cheese is melted.
Viola!
