I have a canon SX 50 HD camera which I basically use ALL the time and I actually have been substituting it for a spotting scope. It works absolutely great and takes fairly good photos although I have it mainly for the zoom.
SO, my question is: The LED screen on the back of the camera is small and being my eyes ain't what they used to be (okay, so I'm getting old) I'm curious if there is anyway that I can use some kind of cable from the camera to a larger screen as in mini I pod. Thoughts?

I had something like this (a loupe as moxford suggests) for a little Pentax camera I had. It attaches to your tripod mount and the the loupe connects to the metal frame via magnets. Should work great for your needs and it also is great in bright light.

After looking up your camera, this may not be the perfect model but a loupe should be a cheap fix for the small screen viewing.
