To @wind gypsy's point, you don't need much HP for whitetails out to 300. Personally i would go with a short action to reduce weight on the mountain as recoil shouldn't be an issue. A .308 is a good choice with light bullets as ammo is easy to find usually. A .243, .257 Roberts, or 6-6.5mm are all more than adequate for what you described as well. If going long action, I don't think anybody would argue with a .25-06. Again, bullets are easy to find at big box and even farm supply stores.

My brother was able to pick up a used Weatherby Mark V Backcountry (original version) in 6.5CM for about the same or less than some of the higher end Kimbers mentioned. It’s nice and light, great stock, and a short 54 degree bolt throw. Seems like it’d be about the perfect rifle for the use and scope choice. 6.5CM would give you a wide range of factory ammo choices, too.

I do love my .25-06, though
