That sounds about right. It expires quickly once exposed to air.

I opened a can of S&S Pork, and a can of Creamed Beef three summers ago, and ate out of them off and on for 4 months. They were fine with the plastic lid on, stored in my pantry. I've also broken down a scrambled eggs can, and distributed it into ziplock bags for weekend trips. It will last way longer than a week.

We have bought those cans, broke them into single serve in vac pouches and put them in the freezer until use in the field. Several days before use in field after freezer. Works well that way. I'm sure it would be bad if the stuff in t can got a little damp and warm, but dry and cool/cold should be fine.
