I used to spend time to clean them up and grind, but never again. 5 hours in the Dutch oven at 375 degrees and they just fall apart.

i am in the exact same boat as you. bone in neck meat done the same is great too.

I usually cut the neck bone out just for the easy of vacuum sealing, but I cook it the same way. Just melts all of the connective tissue.
